Tropical Chicken Salad

I brought this to work on our Hawaiian Day Potluck.
It was a huge hit.

Ingredients
  • 4 c chopped cooked chicken
  • 1 (15 1/4 oz) can pineapple tidbits, drained
  • 1 (11 oz) can mandarin oranges, drained
  • 3/4 c chopped celery
  • 1 (2 oz) jar diced pimiento, chopped
  • 1 tsp grated onion
  • 1/2 c unsalted cashews
  • 1/2 c peach yogurt
  • 1/2 c mayonnaise
Directions
  1. Combine first 8 ingredients; set aside.
  2. Combine yogurt and mayonnaise. Add Chicken to mixture.
  3. Toss the mixtures together.
  4. Chill 2 to 3 hours.
