Melting Snowman Cookies

Ingredients:
  • 1 cup white sugar
  • 1 cup powdered sugar
  • 1 cup butter
  • 2 eggs beaten
  • 1 tsp cream of tarter
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 4 cups flour
  • ½ cup vegetable oil
(Can substitute sugar cookie mixes in bags, tubs, or tubes if so the above ingredients not needed.)
  • Large Marshmallows
  • Tube frosting, Orange, Black, and I chose blue for the scarves.
Ingredients for Royal Icing for Frosting:
  • 4 cups powdered sugar
  • 2 T meringue powder
  • 6 T water
Directions:
  1. Bake Sugar Cookies. When making your circles, it is better to not to have a perfect circle and sizes to give the melting effect.
  2. Make the Royal Icing.
  3. When cookies have cooled, frost the cookies. Again having the frosting run off the cookie is good and to frost them unevenly will give the melting effect.
  4. Spray a microwave safe plate with cooking spray, and place marshmallows on the plate.
  5. Set the microwave for 30 seconds, but watch the marshmallows as they cook. Stop the microwave as soon as the marshmallows start to get puffy, do not let them double in size. It took my microwave 17 seconds.
  6. Spray your fingers with cooking spray or grease them up with shortening, then gently patted the marshmallow down to give it more of a melting appearance.
  7. Carefully pull the marshmallows off, by the base, and set them on top of the frosted cookies.
  8. Then decorate with the tube of frosting or if you added color to the Royal Icing pipe the decorations onto your cookies.
